The origins of the Tom Collins cocktail

It is difficult to know the true origin of the Tom Collins cocktail. Some believe that it was created in London by the headwaiter of Limmer's bar between the end of the 18th century and the beginning of the 19th century. For others, it was Vincent Collins, a bartender at Whitehouse, who invented it in 1850. It was in 1876 that the famous Tom Collins cocktail was made official in the Bartender's Guide. This great classic was to enjoy great success after Prohibition in New York, and became known for its characteristic freshness.
